Veal Costeletto Chop
Milk-fed Wisconsin veal loin chop is pan seared, finished with wild
mushroom peppercorn sauce. Served with white cheddar chipotle
mashed potatoes.
Veal Picatta
Traditional dish of veal medallions, capers, white wine, and a touch
of cream. Served with red pepper mashed potatoes.
Game Hen
Halved Cornish game hens marinated in rosemary and garlic olive
oil then finished over a mesquite flame. Brushed with a tart cherry
glaze, served over rustic Italian stuffing.
